Last night's Cochon555 brought together pig evangelists, butchers, winemakers and a large crowd of food lovers. Attendees feasted on the culinary delights from the five esteemed chefs while drinking Washington and Oregon wines. Those with iron-clad stomachs who stuck it out til the end were treated to chicharrones dipped in chocolate while John Sundstrom of Lark and Licorous was crowned the king of porcine for the second year in a row. His most notable bite: pork and shrimp sausage on a bed of pickled cucumber, plated in a trio along with pork belly on rice and a perfectly executed rillette. more ›

It's Snout to Tail Again as Cochon 555 Returns to Seattle

We asked this last year, and we ask again: Does "snout to tail" get you giddy? If you missed it last time, the good news is that Cochon 555, Taste Network's national pig-cooking, pig-eating, and pig-educating tour, is returning to Seattle in a few weeks. So far away, but so little time to waste, as the event is likely to be a sell-out. Like last year, five chefs will cook five heritage pigs (coming in at 70-pounds each) in whatever way they'd like: braised, grilled, pressed, pickled, rubbed, smoked, seared, sauced, spiced, injected, marinated, cured, or any other method of madness. Based on creativity, classic preparation, and overall best flavor, one will be named the prince(ss) of pork. more ›
