More Details on Kylen McCarthy's Marjorie Departure

A few days ago we posted some news so baffling that we had to double check the calendar to confirm it was not yet April Fool's. Marjorie chef Kylen McCarthy has departed the Capitol Hill kitchen and is working as a server at Ethan Stowell's How to Cook a Wolf.

We got some details from McCarthy about his move, which he says was essentially driven by the desire to free up his summer and travel around the Northwest.

As McCarthy explains it, "Wolf I feel will be a great opportunity to serve casually, but also work with [chef] Matt Fortner a little bit and maybe do some kitchen time there once in a while as well."

He's hoping to squeeze in a few food events up in the San Juans this summer, but otherwise McCarthy says he has no set plans. In a city where most restaurants of note tout their local and seasonable commitments, McCarthy stands out for his interest in sourcing ingredients and working with purveyors; we're guessing he'll do some exploring on that front during the warmer months.

And we're obviously eager to see where he lands come fall.
