Local Kramer Knives at the Bocuse d'Or
The Bocuse d’Or is an international culinary competition held every two years in Lyon, France. Twenty-four countries compete, and each team is comprised of one chef and one commis assistant. Each team is provided five and a half hours to create two platter presentations, one seafood and one meat, which are judged based on flavor, presentation, technique, and the efficiency in which the teams work.
This year, Team USA was represented by Sous Chefs James Kent and Tom Allan of New York's Eleven Madison Park (former stomping grounds of Canlis Executive Chef Jason Franey). They were coached by Thomas Keller, Daniel Boulud, Jerome Bocuse, Gavin Casin, and Tim Hollingsworth.
Chef Keller asked legendary Olympia-based bladesmith Bob Kramer to donate knives for the presentation plates. However because of time constraints, Kramer was only able to create one original (pictured above) with the rest coming from the Kramer/Shun line.
As beautiful as the knife is, our boys fell short in the competition which wrapped up yesterday with a Nordic sweep. (Ballard lemme hear ya yawp). Denmark won the gold, Sweden took the silver, and Norway got the bronze. Oh well, at least Kramer got some recognition. Kramer knives are typically more elusive than an NBA franchise but there are two up for auction until noon.
