Slice: Pillowy Pizza in West Seattle
Local pizza blogger Adam Lindsley features another Seattle pizza spot for the Slice blog over at Serious Eats. He ventures to West Seattle in search of a pie with a pillowy, puffy crust and finds Phoenicia.
Today's pizza vocab lesson: cornicione = the edge or lip of a pizza crust. Lindsley writes, "Phoenicia's crust is enormous, comprising four of the ten inches of pizza real estate."
Unfortunately the margherita suffered from "an acute case of tomato fail," but other pies, including a Zoe's pepperoni and a grilled eggplant with rosemary lamb sausage get raves. And that cornicione, he says, is crisp on the outside and soft and bready on the inside.
