Recipe: Happy Birthday to You!, Dr. Seuss
It’s Dr. Seuss’ birthday today - Theodor Seuss Geisel would have been 106 years old. Boo to google for not whipping up some fancy commemorative logo! (Our friends over at Chicagoist have their own tribute). Update: Thanks to commenter BigGreenFrank who pointed out the commemorative logo Google did for Seuss’ birthday last year.
We’ve been holding onto this recipe which should work great for a Green Eggs and Ham dish. The recipe is for "Pan Seared Salmon with Avocado Remoulade" [via Simply Recipes], but we figured we could just fry up some eggs and ham and top it with the Avocado Remoulade. Voila! Guess what’s for dinner tonight?
AVOCADO REMOULADE
Ingredients:
- 2 large avocados, cut and peeled
- 3 Tbsp freshly squeezed lime juice (can substitute lemon)
- 3-4 Tbsp light olive oil (light refers to flavor and color, not calories)
- 1 Tbsp minced shallots or green onion
- 1 Tbsp minced parsley
- 1 teaspoon Dijon mustard or to taste
- Salt and pepper to taste
Preparation:
Put avocado pieces and lime juice into a food processor or blender and pulse until blended. Slowly add olive oil, pulsing, until you reach desired consistency of sauce. Add minced shallots (or green onions) and parsley, pulse just until combined. Remove to a bowl, add mustard, salt and pepper to taste.
