Dishin': Flat Iron Chivito at Sip

sip_flat_iron_chivito_300.jpg Belgian band Hooverphonic is on the sound system and a Uruguayan-inspired flat iron "chivito" is on the plate. Life is good at the "progressive American" restaurant Sip, which just opened an outpost in downtown Seattle.

A couple of Japanese-influenced dishes with good wasabi hits are wonderful, but the chivito is the best bite of the night. The steak is natural Angus beef, tender and tasty, bolstered by black olive oil and piquillo pepper aioli. Underneath, some sage garlic frites stay crispy while absorbing the beefy goodness. A little watercress on the side freshens the dish up. And on top, a dreamy duck egg. We've said it before: Everything's better with an egg.
