Do NOT add hoisin directly to the broth, it just muddies it up. I like to take an extra spoon and make a little hoisin/lime dipping bowl. Extra good with tendon!

I eat at the West Seattle location maybe once or twice a month. The staff recognize my family, and bring us our usual order basically as we sit down, drinks and everything. It's perfect for a quick, cheap, satisfying meal.

Fun post. I actually wrote a whole weeks worth of pho articles on my blog a few weeks ago. Than Brothers is okay in a punch, but they are lacking in the most important area of pho; the broth!

Admittedly, I'm a regular at at the Broadway Than Bros, but I just stopped in and the waitstaff took my order as he was seating me. Service doesn't get any faster than that.
