What’s Cookin’: Les Dames d’Escoffier, Locally

Fisher, and Marcella Hazan into your kitchen as you make dinner?” An apt introduction to “Cooking with Les Dames d’Escoffier: At Home with the Women Who Share the Way We Eat and Drink,” edited by Marcella Rosene (co-owner of Pasta & Co.) and just published by our local Sasquatch Books.

To celebrate, and to raise funds for the Seattle chapter of Les Dames d’Escoffier International (LDEI), you can head to Kathy Casey’s kitchen (well, her food studios in Ballard) and sample dishes by local dames who have recipes in the cookbook: Fran Bigelow (Fran’s Original Cheesecake), Braiden Rex-Johnson (Salmon Fillets Baked in Grape-Leaf Wraps), Gina Batali (Batali Family Stuffed Artichokes), and Lisa Dupar (Walnut Fennel Tarts).

We like what we see in the book—not just the interesting recipes, but useful tips like “Use That Chicken Carcass,” “How to Cut in Chiffonade,” and “Preparing Pans to Prevent Turn-Out Trauma.” Wisdom from wise women; you’ll get a copy of the book when you attend the fundraising benefit on October 16.
