With the Korean restaurants in the Seattle area, it has been my experience that they cater to their Korean clientele when it comes to flavor and spice, not us who at least visibly look like we haven’t been chopping on kimchi from the get go. None the less I have found most all the K-town joints to offer up disappointing kimchi as well. I’m guessing it’s from a bag, not an ajuma.
