Gentlemen, start your graters! The Seattle Cheese Festival is running a recipe contest for the best grilled cheese sandwich in town. The top ten finalists get their recipes published online, and the winner has to (gets to?) replicate his or her concoction onstage during the festival, in mid-May.

Recipe guidelines: up to 6 ingredients, and they all have to be available at DeLaurenti (the festival sponsor, as if you couldn't guess). On the other hand, they'll serve your sandwich in their café if you win. Oh, and the bread has to be from Macrina. Oh, and you can't be a professional chef.
