What’s Cookin’: Unselfish Salish

One month from today, Salish Lodge & Spa will host the second annual “The Falls Come to Life” dinner and auction to benefit Food Lifeline--the nonprofit dedicated to ending hunger in Western Washington. Guest chefs Armandino Batali, (Salumi) Holly Smith (Cafe Juanita), Jason Wilson (Crush), Johnathan Sundstrom (Lark), and Matt Costello (The Inn at Langley) will each prepare a signature dish for the menu, as well as contribute a culinary experience as part of the many items up for auction.

Also cooking and contributing will be Roy Breiman, Salish Lodge’s executive chef. We had a moment to throw said chef in the hot oil, producing these flash-fried, quick bites:

How did you get connected to Food Lifeline?

Through America's Second Harvest and SOS (Share Our Strength).

What do you enjoy most about participating in this event?

Helping people in need, the camaraderie of the Pacific Northwest’s extraordinary culinary talent, and the guest excitement.

Beyond this event, in what ways would you like to see restaurants work in ending hunger, both locally and globally?

Continue to donate time and resources toward helping communities become sustainable. Hunger doesn't only affect the homeless; in many cases, it affects people we know and love.

How do eating habits differ between Seattleites and Eastsiders?

Similar tastes, but Seattleites seem more willing to go out and try something different, and do it more often.

What food/dish would you like to put on your menu if only diners would appreciate it more?

Squab.

We got a peek at the menu. No squab, but lots of mouthwatering morsels from land and sea—like grilled octopus, nettle stuffed lamb loin, pear mousse and much more from some of the area’s finest chefs. This promises to be a great event for a great cause for those lucky enough to get one of the limited number of tickets.
