Waffles and Peach Compote 44, Seahawks 41

This fall we are combining our love of the football and our dream of learning to cook. On Sunday morning, following a trip to a local farmer's market/major supermarket chain, we will be preparing a meal from the city of the Seahawks opponent. Then at halftime we will throw our badly burned hands in the air and make hot dogs.

Peaches3.jpgOur roommate is quitting his job, and therefore is taking a more active approach to his home life. He is spending more time with us, listening more, and giving us complimentary feet massages.

He even emailed his friend from Atlanta to find out what type of food they eat down Sherman way. She replied, "Peaches, peanuts, fried chicken, Coke, onion rings, grits. These are a few of my Georgia things."

We thought about making fried chicken along with the waffles and peach compote, however, the though of watching Crisco sizzle in a pan at 9am was a non-starter.

We were content to mix our batter and slice our peaches. Along the way there were many pleasant surprises: pecans are very easy to cut, and a touch more vanilla makes a sweeter waffle. Oh it was all sunshine and meadows in our corner of the kitchen as we prepared breakfast.

We filled the waffle iron with batter and went downstairs to watch the first drive, annoying everyone by screaming, "Don't get hurt," during every play. When we went upstairs the waffle iron was overflowing. This seems to be our biggest problem, trusting that the amount listed in the recipe will be enough, whether it's spices or portions.

Luckily our friend, and the only professional athlete we actually know, stepped in and took charge of dishing out batter, fans of the Finnish basketball team Honsu you are in good hands.

The waffles turned out delicious, while the compote was a bit sweeter than we were hoping because we had to use canned peaches.

The breakfast fried chicken that our roommate made will have us avoiding the Southern Diet. However, those who are looking to add a few pounds in the coming year, jump right in. Might we suggest starting with black eyed peas on the first, they are supposed to bring good luck.

Unless of course you are a Redskin fan.
